He was born in Ankara in 1978. During his childhood and teenage years, he indulged in swimming, fitness, and bodybuilding. Dr. Mert Eray Onen, who considers sport as a lifestyle, achieved various degrees in bodybuilding between 1995 - 1997. He graduated from PE Teaching with a swimming major from Celal Bayar University with high degree in 1999. In the same year, he started working as a PE teacher in Istanbul and his school athletics team became Istanbul city champion in three months. In 2000, he took master degree of major of Sports and Health Sciences with honors. He worked in Celal Bayar University as a research assistant until September 2003. During his research assistance, he offered courses and seminars with the professors and later individually. He finished with a top degree and graduated from the Ph.D. degree of Sports Health Sciences at Marmara University, Institute of Health Sciences with a first degree. He offered lectures and conferences on sports nutrition, anatomy, kinesiology, exercise and sports physiology in more than a hundred training courses and special seminars in different federations. He wrote columns for Cumhuriyet, which is a national newspaper in Turkey for its sports supplement journal for more than one year before he completed his military service in 2011. During his military service he carried out three different R&D projects and due to the implications and applications oft he findings of those projects, some changes were made in the army forces basic PE programs and exam systems. He wrote the book 'Doping in Sports' was publishes in 2012, and he also wrote chapters in 'Exercise Physiology' in 2017. Dr. Mert Eray Önen, whose last book "Locomotor System Anatomy and Kinesiology" was published in 2019. He has got several articles published in national and international scientific journals. He was the member of education commission of Turkish Rowing Federation between 2009 - 2012, vice president of International Pilates Federation between 2011 - 2013 member of education commission of Turkish Bodybuilding, Fitness and Armwrestling Federation between 2012 - 2016. He worked as a consultant for some private sports clubs in Istanbul and gives lectures to the club coaches and master trainers on the topics he specialized in. He had been worked as a lecturer at Kocaeli University, Faculty of Sports Sciences between 2004 - 2018. Dr. Mert Eray Onen resigned from his job in 2018 and moved to London. Now he is the founding director of European Fitness And Wellness Academy in London.

Tokusoglu has completed her PhD at Ege University Engineering Faculty, Dept. of Food Engineering at 2001. She is currently working as Associate Professor Dr faculty member in Celal Bayar University Engineering Faculty Department of Food Engineering. TokuÅŸoÄŸlu performed a visiting scholar at the Food Science and Nutrition Department /University of Florida, Gainesville-Florida-USA during 1999-2000 and as visiting professor at the School of Food Science, Washington State University, Pullman, Washington, USA during April-May 2010. She has published many papers in peer reviewed journals and serving as an editorial board member of selected journals. TokuÅŸoÄŸlu published the scientific edited three international books entitled Fruit and Cereal Bioactives: Chemistry, Sources and Applications and entitled Improved Food Quality with Novel Food Processing by CRC Press, TAYLOR & FRANCIS,USA Publisher, as third book Food By-Product Based Functional Food Powders by CRC Press, too; Dr Tokusoglu also published three national books entitled Cacao and Chocolate Science and Technology , Special Fruit Olive: Chemistry, Quality and Technology and third one as Frying Oils Science and Technology. She is Associate Editor of WILEY Journal of Food Processing and Preservation. Professor Debabrata Biswas is a leading scientist at University of Maryland, USA. Debabrata Biswas completed PhD from University of Tokyo. Dr. Biswas’s research projects focused on the reduction of pre- and post-harvest levels of colonization and contamination these food borne bacterial pathogens in foods specifically meat and meat products and development of vaccines that prevent colonization of animals by E. coli O157, C. jejuni and Salmonella enterica species which may reduce human gastrointestinal infections.

Wojciech Piekoszewski is a Professor of Medical Sciences with second degree of specialization in Toxicology. He is the Head of the Toxicological and Pharmaceutical Analysis Group and the Head of the Laboratory of High-Resolution Mass Spectrometry, of the Faculty of Chemistry, Jagiellonian University, Krakow, Poland. He is also the Chief Researcher of the Laboratory of Food Biotechnology and Pharmaconutriology. His research and scientific interests are in the application of metabolomics, proteomics and lipidomics as tools for diagnosis (biomarkers) of mental and neurodegenerative disorders, food safety, security, analysis of drugs and medicaments in biological materials.

Charles Brennan is a Professor of Food Science at Lincoln University, New Zealand where he is a member of the Faculty of Agriculture and Life Sciences.Brennan's research interests lie in the interface between food science and human nutrition with particular interest in how bio-active ingredients and processing manipulate the nutritional quality of foods in particular the role of plant dietary fibre in manipulating the glycaemic response.

Lara Hanna-Wakim is the Dean of the Faculty of Agricultural and Food Sciences at the Holy Spirit University of Kaslik, (Lebanon) since 2013. She is the first scientist to represent the MENA Region as a regular member at the Governing Council of the International Union of Food Science and Technology (IUFoST) since 2014. She is nominated by the Lebanese Minister of Education and Higher Education as National Contact Point (NCP) for Climate action, resource efficiency and raw materials for the EU Commission within Horizon 2020 Framework Programs. She is the Focal Point for Lebanon of the Arab States Green University Network (ASGUN) at UNEP, and the National Food Safety Expert at UNIDO. She has been honored, at the Lebanese Parliament, as Women Leader in Lebanese Universities and Research Pioneers, by the National Initiative for the Centennial of Greater Lebanon. She has been honored as well by the Lebanese Minister of Agriculture to acknowledge her major accomplishments and outstanding leadership and performance, and for obtaining the American accreditation ABET for the Diploma of Agricultural Engineering at the faculty, the first in the MENA region. Dr. Hanna-Wakim holds an Agricultural Engineering Diploma from USEK (Lebanon), an MS in Quality Assurance from INAP-G (Paris, France), an MA/PG Diploma in Learning and Teaching in Higher Education from University of Chester (UK), and a PhD in Food Process Engineering from AgroParis Tech (Paris, France).

Gary Stoner is Professor of Medicine at the Medical College of Wisconsin (MCW) Division of Hematology and Oncology, specializing in the fields of chemical carcinogenesis and cancer chemoprevention. He serves as Director of the Molecular Carcinogenesis and Chemoprevention Program in the newly developing Cancer Center. Dr. Stoner received his PhD in microbiology from the University of Michigan in 1970 and became involved in cancer research as a post-doctoral fellow and research scientist at the University of California-San Diego (UCSD). While at UCSD, his research was focused on the development of a mouse model of lung cancer for the identification of environmental carcinogens and for mechanistic studies of lung carcinogenesis. He then joined the Laboratory of Human Carcinogenesis at the National Cancer Institute where he conducted research on the metabolism of tobacco carcinogens in human lung tissues and developed human lung cell culture systems for investigations of carcinogen/oncogene-induced cell transformation. He became involved in chemoprevention research in the early 1980’s while at the Medical College of Ohio, initially investigating the chemopreventive potential of naturally-occurring ellagitannins and isothiocyanates in the rodent lung and esophagus. As an extension of research with ellagic acid, Dr. Stoner’s laboratory developed a “food-based” approach to the prevention of esophagus and colon cancers in rodents and in humans using freeze-dried black raspberries. His research is documented in more than 350 peer-reviewed publications and book chapters, and he has edited several books. Dr. Stoner joined MCW after nearly 20 years at the Ohio State University College of Medicine where he held the positions of Lucius Wing Endowed Chair in Cancer Research and Therapy, Associate Director for Basic Research and Director of the Chemoprevention Program in the Cancer Center, and Chair of the Division of Environmental Health Sciences and Associate Dean for Research in the College of Public Health. In addition, he served as Director of the Laboratory of Cancer Etiology and Chemoprevention in the Arthur James Cancer Hospital and Richard Solove Research Institute. Dr. Stoner has served on several grant and contract review committees including the NIH Chemical Pathology Study Section, the NCI Cancer Biology and Immunology Contract Review Committee, and as Chair of the NIH Chemo/Dietary Prevention Study Section and the American Cancer Society Advisory Committee on Carcinogenesis, Environment and Nutrition. He has also served as President of the Carcinogenesis and Molecular Biology Specialty Sections of the American Society of Toxicology and of the Ohio Valley Society of Toxicology. He has received numerous awards including the NIH MERIT award, and the Distinguished Alumni Award and Honorary Doctorate from Montana State University. Yuanlong Pan completed his BVM from Gansu Agricultural University, P.R. China. Dr. Pan received his PhD in Animal Nutrition from Virginia Tech, USA and PhD in Human Nutrition from UNC-Greensboro, USA. Dr. Pan conducted research in the area of menopause and cognition at Wake Forest University School of Medicine from 1996 to 2000. In 2000, Dr. Pan joined Nestle Purina Research. He has published more than 18 papers, filed 41 patent applications and obtained 10 patents. Recently Dr. Pan won the Academy of Science-St Louis 2016 George Engelmann Interdisciplinary Award for his outstanding achievement in science through collaboration.
